Peanut Butter Cookies

I think I got this recipe from Allrecipes.com.... but I have been using it for some time now and have forgotten who to credit for these fabulous cookies!! They are super soft and chewy and my uncle loved them at the Christmas party.

Peanut Butter Cookies
Yield: 24 cookies

1 cup peanut butter (use Jif people)
1/2 cup butter, softened (not margarine!)
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
3 tablespoons milk
1 teaspoon vanilla extract (not the fake stuff)

1 1/4 cups AP flour
3/4 teaspoon baking powder
1/4 teaspoon salt

1. Preheat the oven to 375.

2. In a large bowl, cream together the peanut butter, butter, and sugars. Beat in the egg, milk and vanilla one at a time. Combine the remaining 3 ingredients and stir them into the wet mixture. The dough will be very wet looking/feeling. Don't panic.

3. Roll balls of dough and place on an ungreased cookie sheet. Do a crisscross pattern with fork tines to squish the balls down.

4. Bake for 8-10 minutes. The edges should be browning but still appear a little wet in the middle. Let the cookies sit on the pan for 2-3 minutes before removing them to cool completely.
